Got a sweet tooth and fancy something delicious to eat with your Aperol Spritz?

Our Semifreddo recipe created by our friends at South London Italian restaurant Forza Win is just what you’re after! Semi Freddo means ‘half cold’ in English and our orangey recipe is the perfect sweet treat for a Spritz with your friends. It will serve 4-6 people so invite your friends over for a slice of Italian goodness!

What you'll need

1 x Large egg

4 x Large egg yolks

2 x Blood oranges

300ml x Double cream

25g x Roasted hazelnuts

4 x Sprigs of fresh mint

2 x Tablespoons Frangelico

100g x Icing Sugar

How to make it

Step 1

Double line a standard bread tin, leaving 2 inch overhang each side. We’ve used a terrine shape for this recipe but you can use any type of tin that can hold a shape

Step 2

Fill a saucepan up halfway and bring it to the boil. It’s important to make sure you use a saucepan that can take the weight of the bowl without it falling in!

Step 3

Separate your egg yolks and whites and place the whites aside for later. In the meantime, grab a sieve and place it over your mixing bowl, sift in half of your sugar and mix with your egg yolks. Whip up until you have a paste-like consistency. Heat on a pan for a few minutes then remove from the water and whisk in the remainder of the sugar

Step 4

In another bowl, beat the cream until soft and add your egg whites until you have a cloud-like consistency which can be turned upside down without leaving the bowl

Step 5

Combine both of your bowls and grate the zest of your blood oranges (and a swig of Frangelico!) into the mixture

Step 6

Gently fold the mixture together until it binds together and pour into your tin. Cover with the excess cling film and chill in the freezer for a few hours

How to Garnish

Step 1

Grab one of your blood oranges, slice the skin off and divide into 4-6 segments. Dice and scatter across your semifreddo

Step 2

Take a handful of hazelnuts and brown them in the oven. Place on a chopping board and crush with a flat-edged knife. Scatter the crushed hazelnuts on top of the blood orange segments

How to Serve

Step 1

Remove from the freezer, unfold the cling film, cover the top and turn the tin upside down onto your serving plate of choice

Step 2

Take your finely chopped mint leaves and sprinkle on top of the Semifreddo. Finish with orange zest and crushed hazelnuts

Step 3

Finito! Relax and enjoy with a refreshing Aperol Spritz
