Fennel, green bean & hazelnut salad

Aperol Spritz has teamed up with Venetian restaurant Polpo to create five easy-to-follow recipe videos, for the #SpritzSuppers series.

Need easy and delicious aperitivo inspiration? This Fennel, green bean & hazelnut salad is a perfect accompaniment to the Aperol Spritz.

WHAT YOU NEED:

  • Green beans
  • Iced water
  • Toasted hazelnuts
  • Shaved fennel
  • Lemons

HOW TO MAKE:

  1. Blanch green beans
  2. Refresh in iced water already prepped
  3. Roughly chop toasted hazelnuts
  4. Add to bowl shaved fennel, green beans, salad leaves, hazelnuts
  5. Add lemon
  6. Season
  7. Serve in bowl
